Every bite, a new story. Pack your appetite as we’re travelling without leaving the table. This themed dining night is a passport for your palate, transporting you and your guests across borders through a six-course menu inspired by regional flavours and traditions. Think sunsets off a Mediterranean coast, a cooling Japanese Kaiseki journey, or a fiery trek via Indian spice route — each experience is designed to make you taste, feel, and live the culture.
Guests are encouraged to dress the part (because who doesn’t love an excuse to wear a kimono or sombrero?) and soak in the atmosphere as Chef Joseph spins stories and flavours from around the world.
Menu Example (Spanish/Mexican x Indian):
- Amuse-bouche: Jumbo prawn marinated in achiote and Kashmiri chili, served in a shot of tamarind consommé
- Starter: Tender octopus charred to perfection, resting on a silky mole verde infused with coconut and fresh coriander
- Entree: Slow-cooked tandoori-spiced lamb tucked into soft corn tortillas, drizzled with smoky Romesco sauce and topped with pickled onions
- Main: Lobster tail glazed with a black garlic-chipotle masala, served over fragrant saffron rice with a touch of coconut cream and roasted cashews.
- Palate cleanser: Creamy manchego with a vibrant mango chutney, sprinkled with lightly roasted pistachio dust on crisp lavash crackers
- Dessert: Kulfi infused with cardamom, rolled in cinnamon-sugar churro crumbs, topped with bittersweet chocolate mole and caramelized sugar
Optional Add-ons:
- Alcohol Pairings: Ouzo tastings, sake samplings, spiced rum or paired wines from the region.
- Bespoke Cocktails: Mediterranean Muse (ouzo, elderflower, lemon, and soda for a refreshing sparkle), Tokyo Bloom (gin, yuzu, cucumber and shiso for a crisp, elegant twist), Masala Sunset (spiced rum with chai syrup and a hint of coconut cream)
- Ambience Setting: Curated playlist and table styling to match the theme.
- Interactive Demo: Learn and have fun with Chef Joseph in the kitchen as he shares tidbits and tricks on drawing maximum flavour out of minimal ingredients
