Every bite, a new story. This farm-to-feast dining night is a love letter to local produce, featuring a five-course menu celebrating the freshest ingredients from Singapore. Expect vibrant flavours, innovative pairings and morsels of funny stories as Chef Joseph serves up hearty dishes that are proudly harvested by our farmers, fishermen, and artisans.
Menu Example:
- Amuse-bouche (from the market): Heirloom tomato tartlet, basil oil, pickled shallots, smoked salt
- Starter (from the sea): Grilled local squid, garlic-chili oil, preserved lemon, chickpea purée
- Entree (from the earth): Charred leeks, romesco, hazelnut crumbs, aged sherry vinegar
- Main (from the pasture): Slow-cooked ibérico pork cheek, celeriac purée, Pedro Ximénez glaze
- Dessert (from the orchard): Orange crema catalana, toasted almond crumble, citrus tuile

- Alcohol Pairings: Craft wines/beers focused on natural, biodynamic, or low-intervention labels.
